France, Paris | The Hyatt Paris Madeleine is elevating their breakfast buffets another notch by bringing in top, local artisanal food producers to show off their premium products. Suppliers include Clementine Oliver, serving gluten free butter cookies, cakes and cream puffs; Alexandre Pignut, offering handmade Passionne cheese; Le Prince de Paris/Yves et Florian Le Guel, providing old-fashioned Paris ham; Frederic Lalos, with bread and breakfast pastries; Joelle et Charlotte Sanchez, with smoked salmon; and organic, hand-prepared muesli and granola by Julie Lutringer. The buffet is open daily for guests and the public.

The newly appointed chef, Sebastein Roux, has brought his refined but adventurous cuisine to his new appointment. Enjoy seating in front of the cozy fireplace in the opulently appointed, casual chic dining room and feast on a green lentil salad with thin-sliced beef and arugula cooked to perfection or savor the free-range chicken, accompanied with crispy corn, soft whipped potatoes, and wilted spinach. As a grand finale, enjoy the chef's dessert specialty of soft meringue shards with a raspberry puree and mascarpone whipped cream.
